Coffee and a cake

Matt needed another recipe.  Without actually making it, here’s my coffee cake tried and true, something to wake up to and go, ‘Yum.’

Streusel Coffee Cake

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 T baking powder
  • 1 tsp salt
  • 1/3 cup butter or margarine, softened
  • 1 cup milk
  • 1 egg

For the streusel

  • 1/2 cup chopped nuts (optional)
  • 1/3 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 3 T firm butter or margarine

Preheat oven to 350º.  Prepare streusel by mixing ingredients together until crumbly.  Set aside.  Beat remaining ingredients in a large mixing bowl on low speed, 30 seconds.  Beat on medium speed, scraping bowl occasionally, 2 minutes.  Spread half of the batter in greased oblong pan, 13x9x2 inches, or square pan, 9x9x2 inches.  Sprinkle with half of the streusel.  Top with remaining batter and sprinkle with remaining streusel.  Bake until a wooden pick inserted into the center comes out clean, 35 to 40 minutes

Makes 9 to 12 servings.
