About to make these and the recipe is getting faded, so I’m copying it for perpetuity (and the rest of the family too)

Chocolate Mint Creams

  • 2 sticks butter
  • 2 cups sifted powdered sugar
  • 1 egg
  • 1 T vanilla extract
  • 2 1/2 cups sifted flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1/4 tsp salt
  • 2 squares unsweetened chocolate

** Cream butter.  Add sugar gradually.  Cream until fluffy.  Add unbeanten egg and vanilla.  Beat well.  Sift together dry ingredients.  Blend into creamed mixture.  Melt the chocolate and add to butter mixture and mix till blended.  Form dough into a roll 2 inches in diameter.  Wrap in waxed paper and chill.

Preheat oven to 400º.  Slice chilled dough1/8 inch thick and bake on ungreased cookie sheet for 8 minutes.  Cool.

Mint Cream Filling:

  • 2 T butterMint and Chocolate.  Fabulous!
  • 1 C sifted powdered sugar
  • 1 T cream
  • Mint flavoring

Cream ingredients together and spread between 2 cooled cookie halves.
